SWEET GOODNESS!
Hey! It is a beautiful winter day here where I live! Today I am sharing a recipe! I do a three day craft show in our area. On Saturday, of that show, the Amish bring a large array of baked goods. Need I say more. Seriously, they are the best bakers. Naturally, I must visit their booth. When I do, I always buy a bag of their caramel hulless puffed popcorn. I have made caramel corn before, but not using the hulless puffed corn.
Creating this is new to me! It is addicting. I can it eat till it makes my mouth sore. That could be a sin! This would be an easy "goodie" for your Super Bowl gathering, Christmas gift giving, Valentines Day etc....
WARNING: This is NOT low calorie or low carb or anything else close to healthy! Just plain yummy!
Preheat your oven to 200 degrees.
Ingredients Needed: 2 Bags of the buttery flavored, hulless, puffed corn
2 Cups light brown sugar
2 Sticks of butter( I use unsalted)
1 tsp. salt
1/4 tsp. cream of tartar
1/2 cup of light corn syrup
NOTE: This is for about 26 cups to 30 cups of popcorn. I would also recommend a candy thermometer.
Bring sugar, butter, salt and corn syrup to a boil. Boil approx. 5 minutes, stirring until 260 degrees. Remove from heat and add soda and cream of tartar. When adding the soda and cream of tartar, it will make the caramel look like it is erupting. This is normal. I have a picture below.
Place puffed corn on 2 greased cookie baking sheets. I use stoneware so I do not grease the baking sheet. Pour caramel sauce over puffed corn and stir to coat. Bake at 200 degrees for 1 hour, stirring 3 or 4 times to help with coating the puffed corn. Once done baking, pour onto wax paper for the caramel to set up. Place in airtight containers. Not really sure how long this will stay fresh, as it does not last long enough at my house.
Again, this makes an amazing snack for any occasion or gift giving. It is very simple to make.
